The fall fruits are so warming to the heart and so delicious to preserve. We will make an apple butter that will make your friends swear you were raised in an Amish community. I will teach you how to make halved pears preserved in a light honey syrup which serves as a great morning treat all winter long. Lastly we will make a quince jelly that has the most beautiful glow- it is like magic as it turns to dark amber. We will use all local and organic fruits and discuss the different varieties. We will make 3 different recipes and you will take home 2 jars of each totaling 6 jars! So the fun can continue at home. Register early as classes have become quite popular!

Fresh heirloom tomatoes are the jewels of a summer garden. They are delicious right off the vine and sustain the gardener with their juicy sun energy. Tomatoes have become a staple in our diets and it is hard to leave them out of our meals once they are no longer in season.

The best way to continue eating local tomatoes year round is to tuck them neatly into jars!

You will learn several versatile ways to preserve local heirloom and dry farmed tomatoes, including Happy Girl's famed tomato juice.

What a delight to go into your cupboard on a cold, winter day and dip into a little summer in a jar!

This workshop will be a great celebration of the beginning of the summer fruits at a beautiful farmstead in the Santa Cruz mountains. I will teach you how to make a low sugar strawberry jam that will have great color and consistency without using added pectin. We will actually go and harvest the strawberries we will use in this recipe out in the farm fields! Cherries are absolutely one of my favorite fruits and since Live Earth does not grow cherries (come on Tom!) we will be getting them from VanDyke Orchard- a 3rd generation farming family in Gilroy. I will teach you how to preserve bing cherries in a light honey syrup that will quickly become one of your favorite decadent treats. Lastly we will make a jam using cherries and strawberries that will have your friends begging for jars as birthday gifts. So delicious. So fun. We will make 3 different recipes and you will take home 2 jars of each totaling 6 jars! So the fun can continue at home. Register early as classes have become quite popular!

<blockquote>"Amazing! I am at my desk at work so I didn't want to sound too strange to my colleagues, but I remember telling my mother-in-law that it changed my life. I drank a whole can in about 25 minutes, and I think I made an audible glowing comment after every sip. I'm not Guardian but I am a foodie from NYC who lives right by the Union Square Green Market and I have never tasted anything quite like that spicy tomato juice! Well done!"

<strong>* Our spicy heirloom tomato juice made The Guardian’s <a href="http://www.guardian.co.uk/lifeandstyle/2009/sep/13/best-foods-in-the-world" target="_blank">top 50 best foods</a> IN THE WORLD</strong>.

<blockquote>"Amazing! I told my mother-in-law that it changed my life. I drank a whole can in about 25 minutes, and I think I made an audible glowing comment after every sip. I have never tasted anything quite like that spicy tomato juice! Well done!"
- Jonathan Simmons, NYC</blockquote>
