June 17: apricots and stone fruits in Pacific Grove 10-1pm
We are so lucky here in california where we have access to the most AMAZING fruit! Have you ever wanted to learn how to make fabulous low sugar jams with the local fruit? We are happy to show you how to do it! This workshop will feature the beautiful Blenheim apricot. Blenheim apricots are an antique fruit that are a delicious gem of summer and are on the brink of extinction because they do not store or ship well. They make the best jam ever and wonderful other recipes too!
In this workshop we will cover all you need to know how to make delicious jams and the keys to preserve food safely. You will learn our secret techniques for making low sugar jam that is packed with fresh fruit and flavor. We will cover technique for making and testing your jam so that it will come out perfect every time! We will begin with an hour introductory talk covering the topics of hot water bath canning and the PH scale and food safety. You will get hands on with some of the Bay Area's very best produce and learn all of the techniques to making great preserves at home!
Aside from jam we will make a syrup and shrub made from different stone fruits. Both of these recipes are a great way to preserve stone fruit and can be added to sparkling water or used in cooking in many ways. You will also learn how to preserve fruit in honey to make a fruit compote!!! YUM!
You will go home with 3 jars of goodies and a lot of knowledge. We will share organic snacks and goodies throughout the workshop too!
