October 27 - Olives, 5:30-8:30pm (3 spots left!)
We all love to eat olives and yet, it is such a mystery how to cure them. Olive trees grow very well in this California climate and they are such a great addition to the pantry. Todd Champagne will demystify the three processes of curing olives. We will cover fast lye curing of green olives, salt brine fermentation and dry salt cured olives. Todd will also show you how to flavor and play with your cured olives. We will discuss and flavoring and pickling and brining of olives and then proper storage techniques. This is going to be really comprehensive! We hope three hours is enough.
You will also be able to purchase bulk quantities of local olives to accompany the workshop so that you will be able to use your newly acquired skills at home. There will also be lye, vinegar, salt and freshly dried herbs along with other miscellaneous supplies needed at the workshop for sale. We will reach out to you ahead of time to place your order for the bulk olives if you desire to purchase them - as soon as we know what the cost will be for this season.This workshop includes a delicious organic light dinner and is from 5:30-8:30pm
